Description

Ingredients

  • 1 lb ground beef
  • 6 slices bacon
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen corn
  • 1 cup chopped spinach
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 cups tater tots
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. 1. Preheat oven to 375°F.
  2. 2. Thaw tater tots for 10 minutes.
  3. 3. Cook bacon in skillet until crispy, then chop.
  4. 4. Sauté onion and garlic in bacon grease until translucent.
  5. 5. Brown ground beef in the skillet, breaking it apart as it cooks.
  6. 6. Mix in cream of mushroom soup and milk, then add spinach and corn. Season with salt and pepper.
  7. 7. Spread the beef mixture in a baking dish, top with cheese, then arrange tater tots on top.
  8. 8. Sprinkle Parmesan and remaining black pepper over tater tots.
  9. 9. Bake for 30 to 35 minutes until golden and bubbly.
