Description
A comforting and budget-friendly casserole, perfect for busy weeknights.
Ingredients
1 can of cream of mushroom soup
1 cup of cooked rice
1 cup of mixed vegetables (frozen or fresh)
1 cup of shredded cheese (your choice)
1-2 cups of cooked chicken or alternative protein
Salt and pepper to taste
Breadcrumbs or crunchy toppings for garnish (optional)

Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine soup, rice, vegetables, cheese, chicken, and seasoning. Stir until well mixed.
3. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
4. If using, sprinkle breadcrumbs or toppings on top.
5. Bake for 25-30 minutes, or until bubbly and golden brown.
6. Let cool for a few minutes before serving. Enjoy!
