Description

Light and crispy air fryer potato pancakes made with freshly grated potatoes and onions, perfect for snacking or as a meal.

Ingredients

  • 2 kg potatoes
  • 2 onions
  • 2 eggs
  • 5 tablespoons all-purpose flour
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. 1. Peel and rinse the potatoes under cold water, then shred them finely.
  2. 2. Peel and rinse the onions, and grate them as well.
  3. 3. In a large bowl, combine the grated potatoes and onions, then add eggs, flour, salt, and pepper, mixing until well combined.
  4. 4. Form small, flat pancakes with the mixture on parchment paper.
  5. 5. Transfer pancakes to the air fryer basket, ensuring they don’t touch, and air fry at 200°C (400°F) for 40 to 45 minutes, flipping halfway through.
  6. 6. Remove from the air fryer and let sit for a few minutes before serving.
