Ingredients

  • 1 (8 oz) block of feta cheese, drained from brine (about 220 grams)
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 1-2 Tbsp honey (plus more to serve)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper (freshly cracked)
  • Fresh thyme (for garnish)
  • Chopped walnuts (optional; raw or toasted)
  • Extra honey drizzle
  • Crusty, toasted bread (like sourdough or baguette)

Instructions

  1. 1. Add feta cheese and Greek yogurt to a food processor and blend until smooth, scraping down with a spatula as needed.
  2. 2. Add pumpkin puree, honey (to taste), thyme, and black pepper. Blend until combined.
  3. 3. Transfer the mixture to the fridge and chill for 30-60 minutes.
  4. 4. When ready to serve, scoop the dip into a bowl, garnish with chopped walnuts, fresh thyme, an extra drizzle of honey, and more black pepper.
