Instructions
1. Marinate the chicken: In a bowl, combine chicken, salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let it marinate for at least 30 minutes.
2. Cook the chicken: Heat vegetable oil in a large pan over medium-high heat. Add marinated chicken and cook until golden brown, about 5-7 minutes. Remove chicken and set aside.
3. Prepare the sauce base: In the same pan, add 1 tablespoon of butter, then add minced garlic and diced onion. Sauté until onion is translucent.
4. Build the sauce: Pour in the tomato sauce, sugar, salt, and black pepper. Stir and bring it to a simmer.
5. Season and simmer: Return chicken to the pan. Pour in heavy cream, cayenne pepper, garam masala, and curry powder. Stir and let it simmer for about 15 minutes.
6. Finish with butter: Stir in the remaining 2 tablespoons of butter until melted and combined.
7. Serve and enjoy: Serve hot over steamed rice or with naan bread, garnished with freshly chopped parsley if desired.
