Ingredients

  • 6 large eggs
  • Vinegar (optional for boiling eggs)
  • ½ cup soy sauce (light sodium)
  • ¼ cup water
  • ¼ cup mirin
  • 2 tablespoons granulated sugar

Instructions

  1. 1. Boil the eggs: Bring a pot of water to a boil and gently place the eggs in. Boil for 6 minutes for soft-boiled texture. Optional: add vinegar to the water for easier peeling.
  2. 2. Shock the eggs: Remove eggs from boiling water and place into ice water for at least 15 minutes to cool completely.
  3. 3. Make the marinade: Mix soy sauce, water, mirin, and sugar in a container; stir until sugar dissolves.
  4. 4. Marinate the eggs: Peel the eggs and place them in the marinade for at least 8 hours, preferably overnight, rotating for even flavor.
  5. 5. Enjoy: Serve the eggs sliced on ramen or as a snack. Store any leftovers in the fridge.
