Description

A comforting bowl of rigatoni pasta tossed with savory Italian sausage, fresh zucchini, and sweet tomatoes.

Ingredients

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. 1. Cook the rigatoni according to package instructions; drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat.
  3. 3. Add chopped onion and cook until softened, about 5 minutes.
  4. 4. Add the sausage to the skillet and cook until browned.
  5. 5. Stir in the garlic, zucchini, and diced tomatoes, and season with salt and pepper.
  6. 6. Simmer for about 10 minutes until zucchini is tender.
