Description

A delightful mix of roasted beets and sweet potatoes topped with feta cheese and a tangy yogurt dressing.

Ingredients

  • 2 medium beets, roasted and diced
  • 2 medium sweet potatoes, roasted and diced
  • 1 cup feta cheese, crumbled
  • 1/2 cup plain yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Mixed greens or arugula, for serving

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Wrap the beets in foil and roast them for about 45-60 minutes until tender.
  3. 3. Peel and dice the beets.
  4. 4. Peel and cube the sweet potatoes, drizzle with olive oil, salt, and pepper, and roast in the oven until soft, about 25-30 minutes.
  5. 5. In a bowl, mix yogurt, olive oil, lemon juice, salt, and pepper for the dressing.
  6. 6. In a large salad bowl, combine the roasted beets, sweet potatoes, and mixed greens.
  7. 7. Drizzle the dressing over the salad and toss gently.
