Description

Ingredients

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Peel and cube the butternut squash into 1-inch pieces.
  3. 3. In a large bowl, combine olive oil, garlic, dried herbs, honey, salt, and pepper.
  4. 4. Add the squash cubes and toss gently to coat.
  5. 5. Spread the squash in a single layer on a baking sheet.
  6. 6. Roast for 25–30 minutes, stirring halfway through.
