Ingredients

  • 4 medium sweet potatoes (peeled and cut into 1-inch cubes)
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons honey
  • 2 tablespoons fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. 2. Slice the sweet potatoes in half, drizzle with olive oil, and season with salt and pepper. Place them flesh side down on the baking sheet.
  3. 3. Roast for about 40-45 minutes, until tender and caramelized around the edges.
  4. 4. In a skillet, combine the butter and honey, melting over medium heat. Add the sweet potatoes, caramelizing for about 3 minutes.
