Description

A quick and delicious one-pan meal combining Italian sausage, gnocchi, mushrooms, and spinach, perfect for weeknight dinners.

Ingredients

  • 1 pound Italian sausage
  • 1 bag (16 oz) gnocchi
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. 1. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent.
  2. 2. Add the garlic and sliced mushrooms, cooking until the mushrooms are soft.
  3. 3. Add the Italian sausage, breaking it apart, and cook until browned.
  4. 4. Pour in the chicken broth and bring to a simmer.
  5. 5. Add the gnocchi and cook for about 5 minutes, or until gnocchi is tender.
  6. 6. Stir in the fresh spinach until wilted.
  7. 7. Season with salt and pepper to taste.
