Ingredients

  • 1 pound chicken sausage, sliced into rounds or half moons
  • 1 cup sweet potato, peeled and cubed
  • 1 cup zucchini, halved and sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce or coconut aminos
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • Optional: grated Parmesan cheese or nutritional yeast

Instructions

  1. 1. Boil or microwave the sweet potato until just tender, then drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken sausage and cook until browned and crispy, about 5 minutes.
  3. 3. Toss the broccoli florets, zucchini, and cooked sweet potato into the skillet. Stir to combine.
