Ingredients

  • 4 lamb chops
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Pat the lamb chops dry with paper towels and season both sides with salt and black pepper.
  2. 2. In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, thyme, and lemon juice to create the marinade.
  3. 3. Pour the marinade over the chops, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes or up to 24 hours.
  4. 4. About 10 to 15 minutes before cooking, remove the marinated lamb chops from the refrigerator.
  5. 5. Heat a heavy skillet or cast iron pan over medium-high heat and add the remaining 1 tablespoon of olive oil.
  6. 6. When the oil is hot, carefully add the lamb chops to the pan. Sear for 3 to 4 minutes on the first side, then flip and cook for an additional 2 to 3 minutes for medium doneness.
  7. 7. Transfer the cooked chops to a plate and loosely tent with foil. Allow to rest for about 5 minutes.
  8. 8. Sprinkle chopped fresh parsley over the rested lamb chops and serve immediately.
