Description

Delicious and hearty pasta rolls filled with shrimp and fresh spinach, topped with creamy roasted red pepper sauce.

Ingredients

  • 12 lasagna sheets (cooked al dente)
  • 1 lb shrimp (peeled, deveined, & chopped)
  • 2 cups fresh spinach (chopped)
  • 2 cloves garlic (minced)
  • 1 cup ricotta cheese
  • ½ cup mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (grated)
  • 1 egg (beaten)
  • Salt & pepper to taste
  • 1 cup creamy roasted red pepper sauce

Instructions

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. In a skillet, sauté garlic in a little olive oil until fragrant.
  3. 3. Add chopped shrimp to the skillet and cook until they turn pink.
  4. 4. Stir in chopped spinach and cook until wilted.
  5. 5. In a mixing bowl, combine the sautéed mixture with ricotta, mozzarella, Parmesan, beaten egg, salt, and pepper.
  6. 6. On each lasagna sheet, place a portion of the shrimp and spinach mixture, then roll up tightly.
  7. 7. Place the rolls seam-side down in a baking dish and cover with roasted red pepper sauce.
  8. 8. Bake for 25-30 minutes until heated through and bubbly.
