Description

Delightfully fluffy muffins made with simple ingredients, perfect for breakfast or an afternoon treat.

Ingredients

  • 250g all-purpose flour
  • 150g sugar
  • 2 eggs
  • 125ml milk
  • 125ml vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. 1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. 2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. 3. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.
  4. 4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. 5. Fill the muffin cups about 2/3 full with the batter.
  6. 6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. 7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
