Description

Adorable meatloaf cupcakes with a smoky bourbon BBQ twist, topped with fluffy mashed potato ‘frosting’. Perfect for weeknight dinners or impressing guests.

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup bourbon BBQ sauce, plus extra for brushing
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes
  • 2 tablespoons butter
  • 1/4 cup milk or cream
  • Salt & pepper, to taste
  • Optional: pinch of smoked paprika for garnish

Instructions

  1. 1. Preheat your oven to 375°F and lightly grease a muffin tin.
  2. 2. In a large bowl, combine the ground beef, ground pork, onion, garlic, breadcrumbs, milk, egg, bourbon BBQ sauce, smoked paprika, chili powder, salt, and black pepper. Gently mix until just combined.
  3. 3. Divide the meatloaf mixture evenly into the muffin cups, pressing down lightly to shape them like cupcakes.
  4. 4. Bake for 20 to 25 minutes, or until fully cooked and browned on top.
  5. 5. During the last 5 minutes of baking, brush the tops with extra bourbon BBQ sauce.
  6. 6. Prepare the mashed potato frosting by mixing mashed potatoes with butter, milk or cream, salt, and pepper until smooth.
  7. 7. Once baked, top each cupcake with the mashed potato frosting using a piping bag or spoon.
  8. 8. Garnish with smoked paprika or extra BBQ sauce and serve warm.
