Description

A warm, comforting one-dish meal featuring tender chicken smothered in a creamy sauce served over flavorful rice.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 diced onion
  • 1 diced green bell pepper
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup long-grain white rice

Instructions

  1. 1. Pat the chicken breasts dry with paper towels and season both sides with garlic powder, paprika, salt, and pepper.
  2. 2. In a large skillet, heat olive oil over medium-high heat and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. 3. Reduce heat to medium. Add diced onion and bell pepper to the skillet, sauté until softened (about 4–6 minutes).
  4. 4. Stir in both cans of cream soup and chicken broth; bring to a gentle simmer.
  5. 5. Add rice to the simmering sauce, ensuring it’s mostly submerged. Add more broth if needed.
  6. 6. Return chicken to the pan, cover with a lid, and simmer for 20–25 minutes until rice is tender.
  7. 7. Let sit covered for 5–10 minutes before serving. Spoon creamy rice onto plates with chicken on top.
