Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 1 lemon, halved
  • Vegetables (carrots, potatoes, onions) for roasting

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, parsley, garlic, salt, and pepper.
  3. Rub the herb mixture all over the chicken and under the skin for maximum flavor.
  4. Stuff the cavity with the lemon halves.
  5. Place the chicken in a roasting pan and arrange vegetables around it.
  6. Roast in the preheated oven for 1 hour or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let it rest for 10 minutes before carving.
