Description

Deliciously creamy cheesecake bites topped with a crunchy strawberry mixture, perfect for impressing guests or indulging in a personal treat.

Ingredients

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/2 cup strawberry puree or strawberry jam
  • 1 1/2 cups crushed graham crackers or golden Oreos
  • 1/4 cup unsalted butter, melted
  • 1 cup crushed golden Oreos or vanilla wafer cookies
  • 1/2 cup freeze-dried strawberries, crushed
  • 3 tablespoons melted butter
  • 1 1/2 cups white chocolate or candy melts, melted

Instructions

  1. 1. Preheat your oven to 325°F and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. 2. In a mixing bowl, combine the crushed graham crackers (or golden Oreos) with the melted butter and press firmly into the bottom of the muffin cup or pan.
  3. 3. In a large bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, vanilla extract, and strawberry puree (or jam).
  4. 4. Pour the cheesecake mixture over the prepared crust and bake for 20-25 minutes for mini bites or 35-40 minutes for a larger pan until set but slightly jiggly in the center.
  5. 5. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight to set properly.
  6. 6. In another bowl, mix crushed golden Oreos, freeze-dried strawberries, and melted butter until resembling coarse crumbs.
  7. 7. Once chilled, remove cheesecake bites from molds or cut larger cheesecake into squares, then roll or sprinkle with the strawberry crunch topping.
  8. 8. For an extra treat, dip each bite in melted white chocolate and refrigerate for 15-20 minutes to set.
