Description
Deliciously creamy and crunchy cheesecake bites with a strawberry twist, perfect for parties or a solo snack.
Ingredients
16 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup sour cream
2 large eggs, room temperature
1/2 cup strawberry puree or strawberry jam
1 1/2 cups crushed graham crackers or golden Oreos
1/4 cup unsalted butter, melted
1 cup crushed golden Oreos or vanilla wafer cookies
1/2 cup freeze dried strawberries, crushed
3 tablespoons melted butter
1 1/2 cups white chocolate or candy melts, melted (optional)

Instructions
1. Preheat your oven to 325°F and line a mini muffin tin or an 8 x 8 inch pan with parchment paper.
2. In a mixing bowl, combine the crushed graham crackers or golden Oreos with melted butter and press firmly into the bottom of the muffin cup or pan to create a crust.
3. In a large bowl, beat the softened cream cheese and sugar together until smooth.
4. Add the eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree or jam until combined.
5. Pour the cheesecake mixture over the prepared crust.
6. Bake for 20 to 25 minutes for mini bites or 35 to 40 minutes for a larger pan until set but slightly jiggly in the center.
7. Allow to cool to room temperature, then refrigerate for at least 4 hours to set properly.
8. Mix together crushed golden Oreos, freeze dried strawberries, and melted butter for the topping.
9. Remove chilled cheesecake bites and roll or sprinkle each with the strawberry crunch topping.
10. Dip in melted white chocolate if desired and refrigerate for 15 to 20 minutes to set.
