Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey
  • 2 tablespoons fresh chives or parsley, chopped

Instructions

  1. 1. Preheat the oven to 425°F.
  2. 2. Wash and peel the sweet potatoes, then slice them into 1/3-inch thick rounds.
  3. 3. Drizzle the sweet potato slices with olive oil and season with cinnamon, smoked paprika, cumin, coriander, red pepper flakes, salt, and black pepper. Toss to evenly coat.
  4. 4. Spread the seasoned sweet potato rounds on a baking sheet in a single layer.
  5. 5. Bake for 20 minutes, flip, and continue roasting for an additional 20-25 minutes until golden brown and crispy.
  6. 6. Transfer the roasted rounds to a serving platter, sprinkle with crumbled feta cheese and fresh herbs, and drizzle with warm honey.
