Description

Ingredients

  • 2 cups black-eyed peas (cooked or canned, rinsed and drained)
  • 1 cup sweet corn kernels (fresh, frozen, or canned)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 medium jalapeño, finely diced (optional for spice)
  • 1/2 cup fresh cilantro, chopped
  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. 1. Rinse and drain the black-eyed peas. In a large bowl, combine the peas with the diced bell peppers, chopped red onion, jalapeño (if using), and fresh cilantro. Gently toss to distribute the ingredients.
  2. 2. In a separate small bowl, whisk together olive oil, apple cider vinegar, lime juice, honey or sugar, garlic powder, and cumin. Season with salt and pepper to taste.
  3. 3. Pour the dressing over the vegetable mixture and gently toss to coat evenly. Cover and refrigerate for at least 1 hour.
  4. 4. Taste after chilling and adjust seasonings as needed. Serve with tortilla chips, over greens, or on grilled fish.
