A bright, friendly twist on a weeknight classic, these Thai Baked Chicken Meatballs are sweet, tangy, and slightly spicy, baked for an easy and lighter meal.
Ingredients
1 pound ground chicken
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon chili sauce
1/2 cup breadcrumbs
1 egg
Salt and pepper to taste
1/4 cup soy sauce (for sauce)
2 tablespoons honey (for sauce)
1 tablespoon chili sauce (for sauce)

Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, mix together the ground chicken, minced garlic, 1 tablespoon soy sauce, 1 tablespoon chili sauce, breadcrumbs, egg, and a pinch of salt and pepper.
3. Form the mixture into walnut-sized meatballs and place them on the prepared baking sheet.
4. Bake for 20–25 minutes until cooked through, or until a meat thermometer reads 165°F (74°C).
5. In a small saucepan over low-medium heat, combine 1/4 cup soy sauce, 2 tablespoons honey, and 1 tablespoon chili sauce. Heat until the honey dissolves.
6. Pour the warm sauce over the meatballs and toss gently to coat.
7. Serve hot with steamed rice, cucumber slices, chopped cilantro, and lime wedges.
