Description

A fun twist on the classic Italian dessert, combining rich coffee and creamy mascarpone in a portable cookie cup.

Ingredients

  • 1 cup cookie crumbs (from cookies like vanilla wafers or graham crackers)
  • 1/4 cup unsalted butter, melted
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 1/4 cup cocoa powder
  • Chocolate shavings or espresso beans for garnish (optional)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a bowl, mix the cookie crumbs with melted butter until well combined.
  3. 3. Press the mixture into the bottom of muffin tins to form cookie cups. Bake for 10 minutes and allow to cool.
  4. 4. In another bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  5. 5. Gently fold the mascarpone cheese into the whipped cream until smooth.
  6. 6. Assemble the cups by dipping the cookie base in coffee, then layering the mascarpone mixture, and repeating until all ingredients are used.
  7. 7. Dust the top with cocoa powder and garnish with chocolate shavings or espresso beans.
  8. 8. Refrigerate for at least 2 hours before serving.
