Description

A delightful vegan bread that combines the sweetness of ripe bananas with earthy sweet potatoes, perfect for a wholesome snack or breakfast.

Ingredients

  • 2 medium sized mashed bananas (extra spotty or brown)
  • 1/2 cup mashed sweet potato
  • 1/3 cup avocado oil (sub any liquid oil)
  • 1/3 cup maple syrup
  • 1 1/2 cups spelt flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 1/2 cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Add all ingredients to a bowl except for the chocolate chips. Mix until just combined.
  3. 3. Fold in the chocolate chips into the dough.
  4. 4. Line a loaf pan with parchment paper. Add the dough to the pan and bake for 45-55 minutes.
