Description

Delicious and healthy vegan cookies made with sweet potatoes, almond butter, and chocolate chips.

Ingredients

  • 1/3 cup cooked and cooled sweet potato
  • 1/2 cup almond butter
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup + 2 tablespoons oat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • ~1/2 cup chocolate chips

Instructions

  1. 1. Preheat your oven to 350 degrees.
  2. 2. In a bowl, add all the wet ingredients (sweet potato, almond butter, coconut sugar, maple syrup, and vanilla extract). Mix them until just combined using a spatula.
  3. 3. Pour in the dry ingredients, except for the chocolate chips. Mix everything until just combined.
  4. 4. Gently fold in the chocolate chips.
  5. 5. Line a sheet pan with parchment paper. Form 8-10 evenly sized cookies. The dough will be sticky, so it helps to work quickly and use wet hands.
  6. 6. Bake the cookies for 12-14 minutes.
  7. 7. Allow the cookies to cool for at least 10 minutes before enjoying them.
