These oil-free Vegan Sweet Potato Tortillas are easy to make with just two ingredients, perfect for wraps, tacos, or as a side dish.

Ingredients

  • 150 g sweet potato, mashed (3/4 cup)
  • 130 g all-purpose flour (1 cup)

Instructions

  1. 1. In a mixing bowl, add the mashed sweet potato and the flour. Stir until well combined.
  2. 2. Use your hands to form a dough ball. Make sure the dough is not too sticky.
  3. 3. Divide the dough ball into 5 equal parts.
  4. 4. On a floured surface, roll out each tortilla with a rolling pin until they are roughly 1/2 cm thick.
  5. 5. Heat a pan over medium-high heat. Cook each tortilla for about 1 minute on each side.
  6. 6. Stack the cooked tortillas on a plate and cover them with a clean kitchen towel to keep them warm and flexible.
