Description

Delicious and healthy vegetarian burritos made with spaghetti squash and colorful vegetables. Perfect for meal prep and gluten-free.

Ingredients

  • 2 Bell peppers
  • 2 cups Spinach
  • 1 Red onion
  • 1 can Beans
  • 1 cup Cheese
  • 1 Spaghetti squash

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Cut the spaghetti squash in half, remove the seeds, and place it cut-side down on a baking sheet. Roast for 30-40 minutes until tender.
  3. 3. In a pan, sauté bell peppers, spinach, and red onion until softened.
  4. 4. Once the spaghetti squash is cooked, scrape the insides with a fork to create strands.
  5. 5. Mix the sautéed veggies with the spaghetti squash and add beans and cheese.
  6. 6. Serve warm, optionally wrapped in a tortilla.
