Ingredients

  • 1 cup uncooked rice
  • 2 cups vegetable broth
  • 2 cups sliced mushrooms
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 cup spinach (optional)
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Grated cheese for topping (optional)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.

  4. 4. In a large bowl, combine the cooked rice, vegetable broth, sautéed mushroom mixture, and spinach. Season with salt and pepper.
