Description

A fun and easy dish that combines the delicious flavors of tacos with the comfort of a casserole, perfect for busy weeknights and family gatherings.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag Fritos corn chips
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • Sour cream and jalapeños for toppings (optional)

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a skillet, cook the ground beef over medium heat until browned; drain excess fat.
  3. 3. Stir in taco seasoning, black beans, corn, diced tomatoes, bell peppers, and onions; cook for another 5 minutes.
  4. 4. In a baking dish, layer half of the Fritos, followed by the beef mixture and half of the cheese.
  5. 5. Repeat the layers and top with the remaining cheese.
  6. 6. Bake for 25-30 minutes until heated through and cheese is bubbly.
  7. 7. Serve with sour cream and jalapeños on top if desired.
