Ingredients

  • 200g dates, chopped
  • 300ml water
  • 1 teaspoon baking soda
  • 100g unsalted butter, softened
  • 175g light brown sugar
  • 200g self-raising flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200ml double cream
  • 100g brown sugar
  • 50g unsalted butter
  • 1 tablespoon brandy (optional)

Instructions

  1. 1. Preheat oven to 350°F (180°C).
  2. 2. In a small saucepan, bring water to boil and add dates and baking soda. Remove from heat and let stand for 10 minutes.
  3. 3. Cream butter and light brown sugar until pale and fluffy. Beat in eggs one at a time, then add vanilla extract.
  4. 4. Fold in self-raising flour until smooth.
  5. 5. Mix softened date mixture into batter until well combined.
  6. 6. Pour batter into a greased baking dish and bake for 35-40 minutes or until a toothpick comes out clean.
  7. 7. While baking, prepare toffee sauce by combining double cream, brown sugar, and butter in a saucepan over medium heat. Simmer for a few minutes.
