Description

A creamy and tangy bruschetta topped with roasted cherry tomatoes, perfect for any gathering or a cozy night in.

Ingredients

  • 8 oz good quality crumbly feta cheese
  • 1 cup plain Greek yogurt
  • 1/4 cup extra virgin olive oil
  • Zest of 1 lemon
  • 1 tbsp honey
  • 1 pint ripe cherry tomatoes
  • 2 tbsp balsamic glaze
  • Salt to taste
  • Freshly cracked pepper to taste
  • 1 baguette, sliced and toasted

Instructions

  1. 1. In a food processor or high-powered blender, combine the feta cheese, Greek yogurt, olive oil, lemon zest, and honey. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning with salt and pepper.
  2. 2. Preheat your oven to 400°F (200°C). Arrange the cherry tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 15-20 minutes or until soft and slightly caramelized.
  3. 3. Slice the baguette and toast the slices until crispy and golden. Spread a generous amount of whipped feta on each toasted slice, top with roasted cherry tomatoes, and drizzle with balsamic glaze.
