Description

Deliciously moist and fudgy brownies made with grated zucchini, using healthier ingredients like almond flour and coconut oil for a guilt-free treat.

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. 1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. 2. In a large bowl, combine the grated zucchini, almond flour, cocoa powder, maple syrup, melted coconut oil, eggs, and vanilla extract.
  3. 3. Mix well until all ingredients are combined.
  4. 4. Add baking soda and salt, then stir again. If using, fold in chocolate chips.
  5. 5. Pour the batter into the prepared baking pan and spread evenly.
  6. 6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
